Weekend wrap-up & Week prepping

We had a great weekend. After haircuts and pilates on Saturday morning, we headed to the new Waterfront Park in Mount Pleasant. Is is beautiful...a great spot for a picnic, swinging at the park, admiring the size of the bridge and fishing...This is the only fishing we did though...
Which quickly attracted the seagles and looks from others (I could tell they were thrilled to draw attention from these annoyingly persistent birds). Captain in training
I had the wrong lens with me, but I was trying to capture the massiveness of the bridge.
After church, lunch and grocery shopping on Sunday, we came home to clean a little and prep food for the coming week. As I did that, there was a little of this going on...
And some of this...
And a lot of this...
I am trying to grocery shop with purpose lately. By that I mean buying ingredients that I can stretch and reuse for other meals throughout the week. It takes some prepping & organization, but fun to watch our weekly bill shrink...here are some of things I have prepped for this weeks meals:


Chicken Chili topped with avocado, cheese and cilantro yogurt & cornbread muffins (recipe from the yogurt container). I made up the recipe and used the beans and frozen corn I had on hand. This should allow for two meals this week. The second go around may be served over some whole wheat pasta.


I just made a Parsley Pesto with Sundried Tomatoes that I plan to spread on chicken, sprinkle with diced olives and bake. Greek Taboulli salad on the side.


Leftover pesto will either be tossed with pasta and fresh tomatoes OR spread on a turkey sandwich.

We seem to always have breakfast food one night. I just made some pumpkin bread that we will have along side fresh fruit, eggs and bacon. Maybe some leftover tomato slices too.


I have a girls night this week that involves an appetizer. I am going to try this yummy summer salad. (#2)Never have tried it, but it looks different and works with the ingredients I have stocked. I am hoping to work my way through many of these salad recipes.


A couple snacks we have ready for easy snacking this week...hardboiled eggs, peanut butter and celery, trailmix, Kashi bars and cookies, brocolli salad, hummus and pitas.

  2. The parsley pesto with sundried tomatoes sounds interesting (if you pass along recipes, that is). I love your organization - something I need to get back to...

    Also, loved the fishing! Can't wait to see her again...

  4. First of all, I vote that if you talk about food you are eating you have to include the recipes! Second, are you eating a gluten free diet? Just curious...
