NO. 63 BURGERS, GRANOLA & TENDERFOOT

Spring has sprung here in Charleston. The carpenter bees are busy doing what they do, our Bradford Pears are in full bloom {before our eyes} & a new little bird, Lucas Moss Preston, has joined the family. My cousin, Stephanie, had her baby boy last week. She had a long labor and delivery, but she and the little one{all 8lbs 5oz of him} are healthy and well. We wanted to be with her right away, but realized she needed her rest and decided to postpone our trip for a couple weeks. I had already jumped on making her some healthy snacks, so now they are in our kitchen and here for us to snack on...although I am the only one snacking...

First up, these Curried Eggplant, Quinoa & Lentil bugers. Right up my alley and have eaten them stuffed in a pita with veggies. Would be even better with a yogurt sauce...I doubled the recipe and hope they freeze well. I can hide a lot of health into our families foods without too many complaints, but I think Bobby could sniff out this one and make a comment or two.



Then I made this---but unfortunatly it got a little burned. I think my oven was too hot because it resulted in a smoke alarm going off, Hadley screeming and me punching every button on the alarm system spastically. Worth another try because nothing sounds better on these spring mornings than a parfait with fruit and coconut yogurt---"yummers" as Hadley says.
